Since Harris Ranch is fully integrated and family owned, we control all aspects of production, starting with cattle sourcing and continuing through our feedlot and processing plant. And now, the same corn-fed beef that generations of travelers have enjoyed at the Harris Ranch Restaurant in California is available nationwide for foodservice operators seeking a superior center-of-the-plate offering. We offer two unique, all-natural beef programs for foodservice including our white tablecloth Black Angus Natural Beef-USDA Certified as well as Harris Ranch All-Natural Certified Premium Beef — a non-breed specific program. Both programs are corn-fed, minimally processed and contain no artificial ingredients. All cattle feed is tested for pesticide residues and finished beef is tested to ensure it contains no antibiotic residues. Our testing protocols actually exceed those of the USDA. Plus, our beef is hand selected to ensure our customers are provided a product they can be proud to feature on their menu.

But what makes Harris Ranch a preferred brand of beef? All of the cattle used to produce our two foodservice brands are sourced, fed and humanely processed exclusively by Harris Ranch. Few, if any, beef companies other than Harris Ranch can truly claim control over all aspects of production. Today, Harris Ranch has the distinction of being one of the largest, family-owned and functionally integrated beef producers in the west. Our beef comes from cattle that spends approximately 80% of their lives grazing on grass. We finish them for a brief period – typically 120 days – on a nutritionally-balanced diet of corn and other feed grains, plus alfalfa hay, vitamins and minerals.

Feeding grains, like corn, helps produce beef that’s more tender, juicy and flavorful. Many of our customers are surprised to learn that beef produced in feedlots actually has a smaller carbon footprint than meat raised exclusively on grasses.

Harris Ranch Black Angus Natural Beef-USDA Certified combines superior taste and tenderness while providing the natural beef attributes demanded by the most discerning consumers. Harris Ranch Natural Black Angus Beef is more than a black-hided beef program. Through our Partnership for Quality (PQ) Program we are able to source an increasing number of young feeder cattle of known Angus genetics that meet specific criteria for cattle performance and carcass quality. In addition to our PQ ranching partners, we also are able to source Angus cattle from other producers with whom we have long-standing relationships. Producers we know are committed to the same core values as Harris Ranch.

The United States Department of Agriculture (USDA) provides oversight to the Harris Ranch Natural Black Angus Beef program. Strict requirements for carcass traits must be met for carcasses to be certified by USDA for the Harris Ranch Natural Black Angus Beef program. Following USDA inspection and grading, Harris Ranch’s Quality Assurance staff selects only the highest quality beef based upon stringent standards that have made the Harris Ranch name synonymous with superior quality. It is this strict attention to detail and hand-selection that results in the most consistent, highest quality, products for our food service customers.

Harris Ranch Black Angus All Natural Chuck Patties are made with 100% USDA Choice, whole-muscle chucks from Black Angus cattle. The Black Angus breed produces beef with higher degrees of fine-textured marbling and thus superior juiciness and flavor. Harris Ranch Natural Black Angus Ground Beef is produced exclusively from young, grain fed cattle. Our trim comes directly off the production line every day and is ground fresh for optimum quality. All trim is Microbiologically Food Safety Tested (MFST) to ensure a safe and wholesome product. Harris Ranch Natural Black Angus Ground Beef offers unequaled quality and unparalleled freshness, in fact — you can taste the difference!

For those seeking a non-Angus natural beef program, our Harris Ranch Natural Certified Premium Beef provides both quality and value from native cattle. All hand-trimmed to one quarter inch in most cases, our Harris Ranch Certified Premium Beef is available in USDA Prime, Choice and Select grades.

No matter which program your chose, you can be assured we raise our beef to the same exacting standards that helped make our name synonymous with premium quality.

Available products include exquisitely-trimmed steaks, roasts and an array of value-added fresh and IQF ground beef patties. As an added measure of safety in our ground beef operation, we test all raw materials before grinding under our internal test and hold program. Starting in the fall of 2010 we also began final grind testing to further ensure product wholesomeness.
