Cajun Filet Mignon with Tomatillo Salsa and Fresh Lime Juice
- 2 ea. 6 oz. filet tail
- 2 tbsp. Cajun seasonings
- 6 oz. tomatillo salsa recipe to follow
- 1 ea. fresh lime
- 2 tbsp. cilantro chopped
- 1-1/2 cup tomatillos canned and pureed
- 1 tsp. cilantro chopped
- 1 tbsp. minced garlic
- 1 ea. jalapeño seeded & diced
- 1/2 ea. red onion diced
In a heated cast iron skillet, place the 6 oz. filet heavily coated in Cajun spices and blackened to medium rare. Cube and serve in a hot skillet with tomatillo salsa and fresh lime juice. Garnish with fresh cilantro.
Tomatillo Salsa Preparation:
Combined all ingredients and refrigerate. Yields 2 cups.
